Okay, so as a working mother, it's hard for me sometimes (okay, most of the time) to come up with new and creative (and not time-consuming!) dinner recipes for my family. So, I'm always looking for new recipes, and I'm sorry to say that I usually don't even try them. But this week, I was brave, and actually tried 2 new recipes.....and they were both really really good! So I just had to share!
The first one is "Mini Ham & Swiss Cups". See here.
I didn't read all the instructions first (shame on me!) so I actually made them in 24 regular muffin cups as opposed to mini muffin cups. I wondered why the dough wasn't making actual cups.....but they still tasted good! They just weren't as pretty.

We had this one tonight. Very good!!!
And I have to share another new favorite recipe, which I got from my cousin, Linnie. We had a family get-together last month, and she brought this Bean Salsa. FABULOUS!! I made it for a birthday party we had with friends a couple weeks ago, and it was a hit! SO GOOD!! So, you'll have to try it and let me know how you like it!!
Bean Salsa
1 16 oz. can each of the following, drained and rinsed:
black beans
white beans
garbanzo beans
black eyed peas
corn
1 16 oz. can diced tomatoes with green chilies
1 small red onion diced
1 bunch cilantro chopped
1/2 bottle Italian dressing
Mix everything together and serve with tortilla chips (I also had the Fritos Scoops, which worked great!). Makes a lot - great for potlucks, etc.

I'm always looking for new recipes too -- I seem to get in a rut and fix the same stuff over and over. It's been awhile since I tried anything new. I can't get to the first one (mini ham & cheese cups). I registered on their site, but it won't let me go anywhere -- I'll check with the site, but maybe you could put the recipe up here too or e-mail it to me?
Also, I made Linnie's bean salsa dip for a ward activity a few weeks ago. Everyone liked it! (My kids wouldn't eat it, though, of course). But I couldn't find any white beans, so I just left them out. Did you find them?

I did find white beans....but I'm sure it was still good without them!
I've been making a salsa like that for years...but never added the white beans and garbanzo beans (or cilantro, for that matter.) I'll have to try it! Instead, I add olives and yummy chunks of avocado with a little bit of lime juice to keep those avocados from browning. It is way yummy! I'm so curious to try your new version. Hugs!
I am a self confessed cookbook/recipie junkie. These sound yummy and we'll have to try them out.
